Tofu Parmesan

Ingredients

  • 8 serving [marinara sauce](http://www.xanthir.com/recipes/showrecipe.php?id=id34)
  • 4 tbsp flour
  • 1 large egg
  • 1 cup breadcrumbs
  • 1/2 teaspoon dried Italian seasoning
  • 14 oz firm tofu, drained and sliced into thick planks
  • 2 1/2 tablespoon extra-virgin olive oil, plus more for drizzling
  • 1/4 cup part-skim mozzarella cheese, shredded
  • 1/3 cup parmesan cheese
  • 8 cup baby spinach
  • 4 slices Italian bread

Steps

  1. 1Make marinara sauce, reducing it well.
  2. 2Season the tofu with salt. Sprinkle the flour on a plate; beat the egg on another; mix breadcrumbs and Italian seasoning on a third. Coat the tofu in flour, then egg, then breadcrumbs. Fry, spending ~2min on each side.
  3. 3Move the tofu to a broiler pan. Top with marinara, then cheese, and broil for 3-4 minutes, until cheese is bubbly and browning.
  4. 4Meanwhile, pan-toast the bread in butter, then sprinkle with garlic salt. Wilt the spinach in another pan, lightly seasoning it.
  5. 5When everything's finished, plate the spinach with the tofu on top, and serve with garlic bread.
