Ingredients

  • 2 cup salad greens
  • 1/4 cucumber, sliced
  • 1/2 cup grape tomatoes
  • 1/4 cup black beans, drained and rinsed
  • 1/4 cup chickpeas, drained and rinsed
  • 1 tbsp pistachios
  • 2 tbsp dried cranberries
  • salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard

Steps

  1. 1Combine olive oil, vinegar, mustard, salt and pepper to taste. Toss with other ingredients in a bowl and serve.
