Ingredients
- •2 cup salad greens
- •1/4 cucumber, sliced
- •1/2 cup grape tomatoes
- •1/4 cup black beans, drained and rinsed
- •1/4 cup chickpeas, drained and rinsed
- •1 tbsp pistachios
- •2 tbsp dried cranberries
- •salt and pepper, to taste
- •2 tbsp olive oil
- •1 tbsp red wine vinegar
- •1 tsp Dijon mustard
