Ingredients

  • 1 cup brown rice (uncooked)
  • 1/2 cup quick-cooking oats
  • 1/2 cup onion, chopped
  • 1/4 cup panko
  • 1/4 cup milk
  • 1 tbsp italian seasoning
  • 1/8 tsp cayenne pepper
  • 1 large egg, beaten
  • salt and pepper
  • 4 serving [marinara sauce](http://www.xanthir.com/recipes/showrecipe.php?id=id34)
  • 2 servings [toasted panko breadcrumbs](https://www.xanthir.com/recipes/showrecipe.php?id=id631)

Steps

  1. 1Preheat oven to 425 degrees. (If not already done, cook rice according to package directions. Ideally, use a rice cooker earlier in the day.)
  2. 2Mix rice, oats, onion, bread crumbs, milk, basil, oregano, cayenne, and egg. Season to taste. Press mixture into small baking dish. Bake for 25 minutes, then let rest for 5 minutes out of the oven.
  3. 3As the rice goes into the oven, make the marinara sauce. Once the marinara is simmering, make the breadcrumbs.
  4. 4Serve rice, topped with marinara and then panko.
