Ingredients

  • 2 cup uncooked brown rice
  • 1 shallot, roughly chopped
  • 2 cup cilantro leaves, tightly packed and tough stems removed
  • 1 clove garlic
  • 1/2 tsp red pepper flakes
  • 1/2 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp salt
  • black beans
  • 6 servings [guacamole](http://www.xanthir.com/recipes/showrecipe.php?id=id404)
  • pico de gallo (recipe below)
  • shredded romaine lettuce
  • chopped yellow bell pepper
  • Monterey jack cheese, shredded
  • 1 1/2 lb tomatoes, cut into 1/4 to 1/2 inch dice
  • kosher salt
  • 1/2 large white onion, finely diced (about 3/4 cup for full recipe)
  • 1 jalapeno, finely diced, optionally remove seeds and membranes
  • 1/2 cup cilantro, finely chopped
  • 1 lime, juiced

Steps

  1. 1Cook the brown rice according to package directions.
  2. 2Combine all the ingredients for the cilantro vinaigrette in a high powered blender and blend for 60 seconds until very smooth. Taste and adjust salt and pepper as needed. Fold the vinaigrette into the cooked brown rice.
  3. 3Divide the rice among 4 bowls and top with black beans, guacamole, pico, shredded lettuce, bell peppers and cheese. Add extra cilantro to garnish if desired.
