Ingredients
- •1 1/2 cup cauliflower florets
- •1 tsp extra-virgin olive oil
- •Salt and pepper
- •1/4 cup panko
- •1 tbsp Parmesan, finely grated
- •1 1/4 tsp fresh rosemary, finely chopped
- •1/2 cup cannellini beans, rinsed and drained
- •1 tsp lemon zest
- •1/4 tsp red-pepper flakes
Steps
- 1Preheat oven to 450F. On a rimmed baking sheet, toss cauliflower with 1/2 of the oil. Season with salt and pepper. Roast for 15-20 minutes. In a small bowl, combine remaining oil, panko, cheese, and rosemary.
- 2Remove sheet from oven. Add beans, lemon zest, and red-pepper flakes to cauliflower, sprinkle with panko mixture and roast until panko is golden brown, about 5-7 minutes.
