Ingredients

  • 1/4 cup pine nuts
  • 2 cup firmly packed basil leaves
  • 3 clove garlic
  • 1/2 cup best quality extra-virgin olive oil
  • 3/4 cup freshly grated Parmesan cheese
  • Salt and freshly ground pepper, to taste

Steps

  1. 1Place pine nuts in a skillet over medium-low heat. Stir or toss frequently until toasted. Cool before using.
  2. 2Place basil, pine nuts, and garlic in food processor or blender. Pulse until finely chopped. With motor running, slowly drizzle in olive oil. Blend a few minutes, stopping occasionally to scrape sides, until smooth.
  3. 3Stir in grated Parmesan. Taste for seasoning and add salt and pepper to taste, if desired. Yields about 1 1/4 cup pesto.
