Ingredients

  • 4 slices white sandwich bread
  • 1/2 oz sweet piquante peppers, roughly chopped
  • 1 peach, pitted and thinly sliced
  • 2 oz fontina cheese, thinly sliced
  • 2 oz white cheddar cheese, thinly sliced
  • 1 tbsp butter
  • 1 clove garlic
  • 3 cup salad greens, washed and torn
  • 3 oz radishes, halved and thinly sliced
  • 1/2 tbsp dijon mustard
  • 1/2 tbsp mayonnaise
  • 1 tsp olive oil
  • 1 tbsp apple cider vinegar
  • salt and pepper
  • 1 oz goat cheese

Steps

  1. 1Assemble sandwiches with **bread**, **cheese**, **peach**, and **peppers**. Season with salt and pepper. Melt **butter** over medium heat, and cook sandwiches 2-4 minutes per side until golden brown. When finished, rub with **garlic clove** and season if desired.
  2. 2While the sandwiches cook, whisk together the **mustard**, **mayo**, **vinegar**, **olive oil**, and a pinch of **salt and pepper**. Toss the **lettuce**, **radish**, and **goat cheese** with the dressing. Serve.
