Ingredients

  • 1 pound ground beef
  • 1 cup onion, chopped
  • 1 cup potatoes, diced
  • 1 cup carrots, sliced
  • 1 cup celery, diced
  • 2 16oz can diced tomatoes in juice (or substitute 2 small cans of tomato sauce)
  • 4 cup water
  • 1/4 tsp dried basil, crushed
  • 1/4 tsp dried thyme
  • 1 bay leaf
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp garlic powder
  • 2 tablespoon beef bouillon
  • 1 16oz can corn
  • 1 16oz can green beans
  • 1 16oz can green peas

Steps

  1. 1In a large soup pot, brown ground beef and onion, drain off fat. Add remaining ingredients EXCEPT for last 3 items (canned vegetables). Simmer on low heat until vegetables are tender, about an hour. Add canned vegetables and simmer 5 minutes. Remove bay leaf and serve.
