Ingredients
- •8 oz dried pasta
- •1/2 cucumber, medium diced
- •2 cup cherry tomatoes, halved
- •1 carrot, small diced
- •1/4 cup fresh basil, chopped
- •4 oz fresh goat cheese, crumbled
- •black pepper, to taste
- •1/4 cup extra virgin olive oil
- •3 tbsp white wine vinegar (use distilled vinegar for more migraine safe option)
- •1 tsp honey
- •1 1/2 tsp dried oregano
- •1 small shallot, minced
- •1 tsp dijon mustard
- •1/2 tsp kosher salt
- •1/4 tsp crushed red pepper
Steps
- 1Cook pasta as directed until al dente, then drain and rinse under cold water to stop cooking.
- 2While pasta is cooking, whisk together dressing ingredients, then mix pasta and all remaining ingredients with it. Serve immediately.
- 3If serving chilled, reserve the vegetables until just before serving, to preserve crispness. Chill at least two hours in the fridge.
