Ingredients

  • 8 oz dried pasta
  • 1/2 cucumber, medium diced
  • 2 cup cherry tomatoes, halved
  • 1 carrot, small diced
  • 1/4 cup fresh basil, chopped
  • 4 oz fresh goat cheese, crumbled
  • black pepper, to taste
  • 1/4 cup extra virgin olive oil
  • 3 tbsp white wine vinegar (use distilled vinegar for more migraine safe option)
  • 1 tsp honey
  • 1 1/2 tsp dried oregano
  • 1 small shallot, minced
  • 1 tsp dijon mustard
  • 1/2 tsp kosher salt
  • 1/4 tsp crushed red pepper

Steps

  1. 1Cook pasta as directed until al dente, then drain and rinse under cold water to stop cooking.
  2. 2While pasta is cooking, whisk together dressing ingredients, then mix pasta and all remaining ingredients with it. Serve immediately.
  3. 3If serving chilled, reserve the vegetables until just before serving, to preserve crispness. Chill at least two hours in the fridge.
