Ingredients

  • 1/4 cup farro
  • Coarse salt and ground pepper
  • 1 cup grape tomatoes, halved
  • 1/2 cup fresh parsley, chopped
  • 1/2 small shallot, minced
  • 1 tablespoon red-wine vinegar
  • 2 teaspoon olive oil
  • 1 ounce fresh goat cheese, crumbled

Steps

  1. 1Bring small pot of lightly salted water to a boil, rinse farro and add to boiling water, and cook for 30 minutes or until tender but chewy. Or cook according to package direction.
  2. 2Drain farro and place in a small mixing bowl. Add tomatoes, parsley, shallot, vinegar, and oil. Season with salt and pepper, and toss. Top with cheese.
