Ingredients
- •1/4 cup farro
- •Coarse salt and ground pepper
- •1 cup grape tomatoes, halved
- •1/2 cup fresh parsley, chopped
- •1/2 small shallot, minced
- •1 tablespoon red-wine vinegar
- •2 teaspoon olive oil
- •1 ounce fresh goat cheese, crumbled
Steps
- 1Bring small pot of lightly salted water to a boil, rinse farro and add to boiling water, and cook for 30 minutes or until tender but chewy. Or cook according to package direction.
- 2Drain farro and place in a small mixing bowl. Add tomatoes, parsley, shallot, vinegar, and oil. Season with salt and pepper, and toss. Top with cheese.
