Ingredients

  • 8 slices bread, toasted
  • 2 tbsp pine nuts, toasted
  • 2 tbsp olive oil
  • 1 tbsp za'atar
  • 2 tsp lemon juice
  • 4 eggs, hard-cooked and chopped
  • 1/2 cup green olives, chopped
  • 2 tbsp fresh cilantro, roughly chopped
  • 2 tbsp red onion, minced
  • Salt
  • Black pepper

Steps

  1. 1While the eggs are cooking, toast the pine nuts and bread.
  2. 2Whisk together oil, za'atar, and lemon juice. Toss with eggs, olives, cilantro, onion, and pine nuts; season with salt and pepper to taste. Serve on toast.
