Ingredients
- •1 cup green lentils, rinsed
- •2 clove garlic, minced
- •500 ml vegetable broth
- •250 ml water
- •2 tbsp coconut oil
- •1 tsp fresh or dried rosemary
- •1 tbsp olive oil
Steps
- 1Pour coconut oil and chopped garlic into a saucepan, over medium heat, and sauté the garlic until lightly browned.
- 2Add vegetable broth to the saucepan, allowing everything to simmer for about 5 minutes.
- 3Add 1 cup of water along with lentils and allow to simmer (uncovered) for about 20-30 minutes until they are soft. Add rosemary and drizzle olive oil near the end.
