Ingredients

  • 4 russet potatoes, scrubbed clean
  • 2 avocados
  • 1 tbsp lime juice
  • 1 tbsp red onion, diced
  • 1 tbsp cilantro, chopped
  • 1/2 tsp jalapeno, minced
  • salt
  • 1 roma tomato, chopped

Steps

  1. 1Preheat oven to 400F. Pierce potatoes all over with fork. Bake potatoes for 1 hour. Meanwhile, mash the avocados, lime juice, red onion, cilantro, jalapeno, and salt. Spoon onto baked potatoes. Top with tomato.
