Golden-crusted Brussels sprouts

Ingredients

  • 24 small Brussels sprouts, trimmed and halved
  • 1 tbsp extra-virgin olive oil
  • Salt
  • Black pepper
  • 1/3 cup Parmesan, grated

Steps

  1. 1Gently coat the brussels sprouts with oil, salt, and pepper. Add oil to a medium-size pan, and bring up to medium heat, then add sprouts, cut side down. Cover and cook for 5 minutes, until the sprouts are tender and only very slightly browned.
  2. 2Uncover, turn heat up to medium-high, and cook for a few minutes, until cut sides are golden and caramelized. Flip and cook for another minute or two, to get some browning on the round side. Season to taste, then serve immediately, topping with parmesan.
