French-Onion Stuffed Potatoes

Ingredients

  • 1 large onion, thinly sliced
  • 2 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 cup beef broth
  • 3/4 cup gruyere, shredded
  • 4 russet potatoes

Steps

  1. 1Bake potatoes at 400° for 1 hour. Cook onion with olive oil and salt until caramelized, about 30 minutes.
  2. 2Scoop flesh out of the potatoes and mash with the onion, beef broth, and 2/3 of the gruyere. Stuff into the skins, top with more cheese, and broil to melt.
