French-Onion Stuffed Potatoes

Ingredients
- •1 large onion, thinly sliced
- •2 tbsp olive oil
- •1/4 tsp salt
- •1/4 cup beef broth
- •3/4 cup gruyere, shredded
- •4 russet potatoes
Steps
- 1Bake potatoes at 400° for 1 hour. Cook onion with olive oil and salt until caramelized, about 30 minutes.
- 2Scoop flesh out of the potatoes and mash with the onion, beef broth, and 2/3 of the gruyere. Stuff into the skins, top with more cheese, and broil to melt.
