Ingredients

  • 1 large celery root, peeled thickly to remove the nobby skin
  • 2 large carrots (or 3 medium)
  • 1 lemon, juiced
  • 1/2 tsp sea salt
  • Black pepper, to taste
  • 1 tsp sugar
  • 1 Tbsp olive oil

Steps

  1. 1Slice the celery root and carrots into long, thin shreds, using the shredder attachment of your food processor, or a mandoline, vegetable cutter, or grater.
  2. 2In a bowl, toss the shredded vegetables with the other ingredients. Taste, and adjust the seasoning if needed. This can be eaten right away, but it will mellow a little as it rests.
