Ingredients
- •1 large celery root, peeled thickly to remove the nobby skin
- •2 large carrots (or 3 medium)
- •1 lemon, juiced
- •1/2 tsp sea salt
- •Black pepper, to taste
- •1 tsp sugar
- •1 Tbsp olive oil
Steps
- 1Slice the celery root and carrots into long, thin shreds, using the shredder attachment of your food processor, or a mandoline, vegetable cutter, or grater.
- 2In a bowl, toss the shredded vegetables with the other ingredients. Taste, and adjust the seasoning if needed. This can be eaten right away, but it will mellow a little as it rests.
