Ingredients
- •1 tbsp balsamic vinegar
- •1 tbsp olive oil
- •salt
- •pepper
- •4 oz fresh block mozzarella, cut into 24 1/2-inch cubes
- •24 small cherry tomatoes, or 12 large cut in half
- •24 basil leaves
- •24 bamboo skewers
Steps
- 1Combine the balsamic vinegar, olive oil, and a dash of salt and pepper. Whisk and set aside.
- 2Toss the mozzarella with 1 tsp olive oil and a dash of pepper. Season to taste with salt, if necessary.
- 3Slide one tomato onto each skewer, followed by a basil leaf folded in half, followed by mozzarella. Brush with the vinaigrette. Transfer to serving plate and serve immediately.
- 4Can be assembled up to 3 hours in advance. Do not refrigerate.
