Ingredients

  • 1/2 tbsp sugar
  • 1 tbsp rice vinegar
  • 1/4 tsp salt
  • 1/8 tsp ground black pepper
  • 1 medium carrot, julienned
  • 1 medium cucumber, julienned
  • 1/4 cup red bell pepper, chopped
  • 1 green onion, thinly sliced

Steps

  1. 1In a small bowl, whisk together sugar, vinegar, salt and black pepper; set aside.
  2. 2Peel and julienne carrot and cucumber. Chop bell pepper and green onion.
  3. 3Add carrot, cucumber, bell pepper and green onion to dressing mixture. Toss vegetables to coat. Serve immediately.
