Ingredients
- •4 oz Italian bread, cubed
- •2 tbsp olive oil
- •salt and pepper
- •1/4 cup sliced almonds
- •1/4 cup Parmesan, grated
- •3 anchovies
- •1 garlic clove
- •2 tsp dijon mustard
- •1 lemon, juiced
- •1/4 cup olive oil
- •6 cup lettuce
Steps
- 1For croutons: Toss bread with olive oil, season with salt and pepper. Spread on a baking sheet and bake at 425, about 8 minutes. Allow to cool.
- 2For dressing: Meanwhile, process almonds, parmesan, anchovies, and garlic in a food processor until finely chopped. Transfer to a large mixing bowl. Add dijon and lemon juice, whisk until just combined. Drizzle in olive oil and whisk constantly until thoroughly combined. Season with salt and pepper if needed.
- 3Toss dressing with lettuce and croutons.
