Ingredients

  • 4 oz Italian bread, cubed
  • 2 tbsp olive oil
  • salt and pepper
  • 1/4 cup sliced almonds
  • 1/4 cup Parmesan, grated
  • 3 anchovies
  • 1 garlic clove
  • 2 tsp dijon mustard
  • 1 lemon, juiced
  • 1/4 cup olive oil
  • 6 cup lettuce

Steps

  1. 1For croutons: Toss bread with olive oil, season with salt and pepper. Spread on a baking sheet and bake at 425, about 8 minutes. Allow to cool.
  2. 2For dressing: Meanwhile, process almonds, parmesan, anchovies, and garlic in a food processor until finely chopped. Transfer to a large mixing bowl. Add dijon and lemon juice, whisk until just combined. Drizzle in olive oil and whisk constantly until thoroughly combined. Season with salt and pepper if needed.
  3. 3Toss dressing with lettuce and croutons.
