Mike’s Restaurant Style Salsa
We go to this small Mexican restaurant in downtown Princeton all the time and have been going there for well over a decade now; maybe 15 years. When you sit, they give you this really spicy fresh salsa. This is my take on that salsa; just not as spicy. If spicy is your thing, throw in extra jalapeños or habaneros.

Ingredients
- •4 beefsteak tomatoes, chopped
- •1 jalapeño, chopped
- •1 medium onion, chopped
- •1 tablespoon dried cilantro; 3x if you got fresh
- •Juice of a half lime
- •Pickled jalapeño juice
- •Splash of white distilled vinegar
- •Splash of red wine vinegar
- •Salt
- •Pepper
Steps
- 1Chop all of your ingredients into a mixing bowl
- 2Put dry ingredients in
- 3Mix well
- 4Pour your pickled jalapeño juice on top; you’re pretty much trying to cover the entire chopped ingredients
- 5Squeeze the juice of half a lime
- 6Pour a splash of white vinegar in
- 7Pour a splash of red wine vinegar in
- 8Salt and pepper to taste
- 9Give a good stir

- Even better if you make it a day in advance; let it sit in its juices for a few hours in the fridge.
