Killer Fajitas

Ingredients

  • 1 cup of orange juice
  • 1/2 cup of pineapple juice
  • Juice and zest from 1 lime
  • 2 tbsp Worcestershire sauce
  • 2 tbsp soy sauce
  • 1 tbsp minced garlic
  • 1 1/2 tbsp cumin
  • 1/2 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper
  • 1/2 tsp salt
  • 1 tsp black pepper

Steps

  1. 1Marinate the chicken for 2 to 5 hours (don’t go longer than 5 because the acidity will break down the chicken).
  2. 2Remove the chicken from the marinade and generously season with Lime Pepper seasoning.
  3. 3Grill the chicken until cooked (or use an electric skillet). Put in a bowl and let rest for 10 minutes. Save the juices to pour over the finished fajita mix.
  4. 4For the vegetables, season with salt and pepper, nothing more. Cook the vegetables to your liking. Add grilled pineapple if you like.
  5. 5Add back in the sliced chicken and mix with the vegetables.

Notes
This marinade works equally well on chicken and steak. This marinade should be enough for 5 to 6 chicken thighs.
