Ingredients
- •1 cup of orange juice
- •1/2 cup of pineapple juice
- •Juice and zest from 1 lime
- •2 tbsp Worcestershire sauce
- •2 tbsp soy sauce
- •1 tbsp minced garlic
- •1 1/2 tbsp cumin
- •1/2 tbsp chili powder
- •1 tsp smoked paprika
- •1 tsp onion powder
- •1/2 tsp cayenne pepper
- •1/2 tsp salt
- •1 tsp black pepper
Steps
- 1Marinate the chicken for 2 to 5 hours (don’t go longer than 5 because the acidity will break down the chicken).
- 2Remove the chicken from the marinade and generously season with Lime Pepper seasoning.
- 3Grill the chicken until cooked (or use an electric skillet). Put in a bowl and let rest for 10 minutes. Save the juices to pour over the finished fajita mix.
- 4For the vegetables, season with salt and pepper, nothing more. Cook the vegetables to your liking. Add grilled pineapple if you like.
- 5Add back in the sliced chicken and mix with the vegetables.

- This marinade works equally well on chicken and steak. This marinade should be enough for 5 to 6 chicken thighs.
